Would You Like To Impress Your Dinner Guests?
Sure you would, who wouldn’t Duh? These easy to prepare potatoes are sultry, smokey and sexy, in the food way of course! I am a potato junky, there, I said it. Well actually, I’m a starch freak, but smart enough to know it and balance that addiction out with other food groups.
These roasted potatoes can be served with anything or by themselves. I’ll share a couple of my favorite add-ins after I give you the basic ingredients and cooking instructions. It’s sooooooooo simple, yet pleasing to the taste-buds. Alright? Alright . . . here we go!
You Will Need
Red, yellow or both kinds of potatoes. How many? I don’t know, that all depends how many you’re cooking for or how many left over potatoes you want. I usually use about 9 or 10 medium size potatoes washed and tenderly dried like the Goddess of the Earth. Wow, that was so cheesy! The idea is to use a potato that has a waxy skin as this makes for a crispier outside and super tender inside.
Onion powder (as much or as little as you want) or 1 package of onion soup mix, the choice is yours.
Garlic powder (again, as much or as little as you want) don’t forget, they’re your taste-buds, make them the way you want too!
Sea salt, to taste (less if you use the soup mix)
Black pepper, I have found that 1/2 to 1 tsp works great
SMOKED PAPRIKA . . .This is the magic ingredient, yes it is!!!!! I LOVE smoked paprika, a big heaping TBSP! More if you want, it’s your party!
Extra Virgin Olive Oil (EVO) about 1/2 cup (if using the cast iron pan, you will need an extra 2 TBSP EVO)
A large capacity mixing bowl
Roasting pan or my secret weapon . . .A Cast Iron Frying Pan (A good size one)
Set oven to 350 degrees
Cut potatoes into bite size pieces and place in mixing bowl.
Add olive oil, onion powder or soup mix, garlic powder, pepper, sea salt and . . . (drum roll please) . . . The Smoked Paprika!
Using a large spoon, mix everything together like you mean it, passionately covering each delectable morsel with all that delicious goodness!
Once they are seriously well coated, either place them in a roasting pan or add the 2 TBSP of EVO to the cast iron pan and turn the heat on low to medium.
If using the roasting pan, cover with aluminum foil and place in oven. after about 40 minutes, remove foil, stir and place back in the oven (without the foil) bake for an additional 25 minutes, remove from oven and check to see how tender they are. If additional cooking time is necessary, place back in oven, periodically checking every ten minutes until they are the way you like them.
If using the cast iron pan, heat oil to low/medium and add potatoes stirring consistently for about 5 minutes. Shut off heat and using a potholder (pan will be really, really, hot . . trust me) remove and place in oven. After about 20 minutes, give the potatoes a good stir and cook for another 25 minutes. Stir again and keep checking for desired tenderness. When they are to your liking, remove from oven and let them sit for a couple of minutes.
Give them one good final stir and serve, serve, serve!!!! bet you can’t eat just one !!!
Remember when I talked about adding extras in, well here are some really kickin additions. When the potatoes are done, add in some crispy, crumbled, bacon and some feta cheese . . . Ooooooh Soooo Goooood!
Like BBQ? Add in some boneless BBQ chicken pieces and some grated cheddar cheese.
When you remove the cast iron pan from the oven, turn the top burner on low and place the pan back on burner. Add in a few slightly beaten eggs and scramble with potatoes, add crispy, crumbled bacon and some shredded cheese!
