So, it was one of those nights when I wanted to make something different for supper, but didn’t want to invest a ton of time creating a masterpiece. However, what happened next actually turned out to be a culinary hit and moved into the top ten meals my family likes when I cook.  I am a firm believer that when you have some basic, ordinary (or even un-ordinary) ingredients in your fridge or cabinets, then you can put together something that everyone will enjoy.

I hunted through the fridge, freezer and cabinets and took these random ingredients out for incorporating together. It was love at first sight!

1 or 2 large yellow onions sliced

1 package of frozen puff pastry sheets (2 in a box)

Sliced ham from the deli (about 12-14 slices)

Gruyere and American cheese (about 3 cups shredded) You can use whatever cheese you like or have on hand.

Left over PapaTony’s smoked potatoes (Recipe is under Cooking In a Little Kitchen) Totally optional, but I couldn’t resist

Let’s Put It Together

Take out frozen puff pastry sheets and let thaw on counter for about 20 minutes or until they’re not like two pieces of cardboard

Set oven to 350 degrees

In a frying pan on medium heat, add some butter, the sliced onions and saute until caramelized. Let them cool for a few minutes.

On a nonstick or lightly greased cookie sheet, place 1 of the puff pastry sheets.

Starting with the ham, place about 9 slices of ham on top of puff pastry to cover it making sure to leave a 1 inch border around it. (I did 3 rows of 3 and it worked perfectly.

Next, take half the caramelized onions and place on top of the ham slices

Do the same thing with the shredded cheese only using half

Go ahead and add half the smoke potatoes now ( this is optional, I had leftovers so I figured, hey, what the hell I might as well use them!)

Repeat each step using the other half of ingredients.

Brush the edges of bottom pastry sheet with egg wash and cover it with the other puff pastry sheet. Use a fork to crimp the whole thing together.

Cut 3 slices in the middle of top sheet about 2 or 3 inches.

Place in oven for about 20-25 minutes or until the top is nicely golden brown.

Remove from oven and let sit for a few minutes. Voila, you now have “Pimped Out Puff Pastry” Cut it into squares (I did 12, but 9 works too)

You can serve this with fried eggs, maybe a little hot sauce, ketchup or even a salad, but all I know is my family devoured it and my wife brought it for her lunch the next day. If you look close enough, most times you’ll be able to find deliciousness hidden within your kitchen! I hope you like it!
