Hi Friends,

Do you love “Oatmeal Cookies?”   I do! I would have to say that they are tied for first place with Oreo’s on my most awesome cookie list. I don’t know how to make  Oreo’s, but I must admit that “I Make The Best Oatmeal Cookie’s You Will Ever Eat!” They are so good that when I make them, I usually have to make 3 dozen of them because they are devoured within a day or 2.

If you’ve read my “Cooking In  A little Kitchen” post, then you are aware of my disdain for my itsy, bitsy, kitchen and how clever and ingenious I need to be about cooking and baking “easy, but delicious stuff.” Well my friends and fellow chef extraordinaire’s, here is my recipe for “Oatmeal Cookie’s” that is sure to make you do back-flips! (please send me a video of you flipping)

I really like this recipe because I can sit (or stand) at the kitchen table with all the ingredients in front of me and get busy making “Oatmeal Cookies!” Are they typical cookie’s? Hmmmm . . . well, probably, maybe, yes, sort of kind of no . . . O K, so I don’t use raisins, there, I said it. Raisins in cookies remind me of little dried up fly’s. I like raisins, but not in cookie’s, um, or bagels, but I do add a few extra’s in the cookies and I’m going to share my most favorite ever “Oatmeal Cookie” concoction. However, if you love raisins, then gladly toss them in. I’ll tell you when.

A bowl for mixing (or you can use a mixer with a paddle attachment, that’s what I use), Cookie sheet(s), Parchment Paper (it’s fine if you don’t have it, I just spray the cookie sheet with cooking spray before dropping the cookie balls on it. (That’s such a funny set of words . . . cookie balls.)

2 sticks butter (softened at room temp)

2 ginormous eggs (also at room temp)

1 Cup Brown sugar, tightly packed down (dark or light is fine)

1 Cup granulated sugar

1 and 1/2 Cups flour

1tsp Baking powder

1tsp Kosher salt

1tsp Ground cinnamon

2tsp Vanilla Ectract

2 and 1/2 to 3 Cups “Old Fashioned Oatmeal”

1/2 Cup Chocolate Chips

1/2 Cup Chopped Walnuts

1/2 Cup Chopped Cashew’s

O K, alright . .and 1/2 Cup Raisins (Totally Optional, actually, all the add-ins are optional)

Set oven to 350 degrees

In a bowl (electric mixer or by hand) beat the butter, brown sugar and sugar together on medium high speed until well blended

Turn the mixer to low and add eggs and vanilla extract.

In a separate bowl combine baking powder, cinnamon, salt and flour (you can sift them together if you want too, but I don’t have a sifter, so no big deal)

With your mixer on low or with super human strength, slowly add all the dry ingredients to the butter mix.

Next you add the oat’s, chocolate chips, walnut’s and cashew’s . . . Oh, and I suppose the raisins . . . or just the oats for simple delicious cookies, the choice is yours and yours alone.

Mix or stir until all the delicious goodness is perfectly (ya, right) combined.

Get your cookie sheet with either the parchment paper on it or sprayed with cooking spray

Now comes the fun part-using a tablespoon or ice cream scoop, plop oatmeal balls on cookie sheet 3 or 4 across and 5 or 6 deep. It all depends on how big you want your cookies.  With the back of the spoon or scoop, just flatten the tops a little bit. Place the cookie sheet in the oven and bake for about 12-15 minutes. Remove when done and put them someplace to cool a little bit. remove them with a spatula and place the cookies on a plate to cool the rest of the way. Repeat until all the dough is used and then  ENJOY!!!!!!!!!!!!

One thing I like to do is; When I’m at the end of the batter, I make (if I can) 4 large cookies. The reason . . .Well, my friends refer to me as the ice cream whor . . .O K so you get it, but it’s so true. I could eat ice cream for every meal of the day and never get tired of it. I call this a . . . “Ben, Jerry & PapaTony Sandwich.”  Yes, I am addicted to Ben & Jerry’s Ice Cream, I cannot lie. Anyways, I take my favorite Ben & Jerry’s Ice Cream (Cherry Garcia) and place a large scoop in between 2 of the large “Oatmeal Cookies” and make the most delicious ice cream sandwich you will ever eat! You can use any ice cream you like because no matter what it is, it’s delicious between 2 “Oatmeal Cookies” (My cookies, of course) I sincerely do wish that Ben & Jerry’s would bring back Cool Britania Ice cream. A guy can dream can’t he?

Do you like Peanut butter? If you make a few plain cookies, spread a little peanut butter and jelly in between them . . . So Awesome! Got some with raisins? Spread a little plain or strawberry cream cheese between them, the possibilities are endless. It really doesn’t matter because no matter how you bake them, they taste phenomenal just as they are!

I sincerely hope you try my “Oatmeal Cookie” recipe, I guarantee you’ll love them! They were created in a little kitchen, but with a great, big Heart!
